The experience of opening this item was great. The Cangshan Haku Nakiri is packaged in a nice box with dense foam padding and a magnetic closure. The wooden sheath is not only attractive, but functional for safe storage (if you don't have a knife block) or transport. The knife itself is beautiful, from the Damascus steel blade to the African blackwood handle. (I looked up African blackwood and learned it is a very hard and dense wood related to rosewood. Apparently the Egyptian's word for this wood is the origin of the word ebony, although blackwood is not the same as what we call ebony today.) Note that the knife is not dishwasher safe and its handle requires occasional application of mineral oil to avoid drying out and cracking.My main knife is a German-made Zwilling Santoku, so I am not new to quality kitchen knives. The Cangshan nakiri has a feel of quality, comfortable to hold both by the handle and with a pinch grip. In the hand, it feels blade heavy, which is appropriate for the tap cutting a nikiri is designed for, but as my photo shows, the balance point is almost at the center -- just slightly closer to the handle. Incidentally, there is enough of a curve in the blade to allow a rocking cut, if that is your preference.The only thing I'm not fully happy with is the out-of-the-box blade edge. It's sharp, but I can feel a burr on one side, which indicates the finishing wasn't complete or thorough. A professional sharpening seems necessary to get the knife up to its full potential.
